Jamie Oliver's Banoffee Pie
Who doesn't love a good ol' Banoffee Pie? This Banoffee Pie recipe is a Jamie Oliver original, but I sourced it from allconsuming.com. This recipe is so quick and easy (it shouldn't take more than half an hour) and it is not as sickly sweet as some other Banoffee Pie recipes. Definitely worth a try!
Ingredients:
1 store bought pie crust
2 bananas
100ml milk
4 tbsp caster sugar
300ml cream
1 tbsp coffee essence
2 bananas
100g of dark chocolate
Method:
1) Puree the bananas with the milk until they are well combined and smooth in consistency.
2) Melt your caster sugar in a saucepan over a high heat.
3) Add the banana and milk mixture to the melted caster sugar/toffee. Continue stirring until the toffee melts back into the bananas.
4) Pour into the pie case and freeze for 20 minutes.
5) Whip the cream and then fold the coffee essence into the cream.
6) Slice the bananas and arrange over the pie filling, then spoon the cream over the top.
7) Create shards of chocolate for the top of the pie.
Tips:
When melting the caster sugar, rather than stirring it, just gently tilt as it melts to a dark caramel colour.

The British couple at our table on our cruise told us about Banofee pie and said I *had* to make one! What is caster sugar? I've never heard of that!
ReplyDeleteThey really are delicious, Jillian. Go ahead and do yourself a favor and give this one a try. Caster sugar is basically just a really fine sugar. I think it could also be known as confectioners sugar, do you have that? If not, just place the required amount of sugar in a blender and blitz until its a fine powder :)
